These coffee cherries are selectively picked by smallholders. Using the wet hull process, farmers remove the outer skin mechanically. They store the beans for up to a day still containing the mucilage, then washing it off to start the sun drying process. This gives this coffee it’s typical intense flavor and heavy body. We taste earthy, cocoa, and sweet chocolate notes.
